Peachy Lemon Poppy Muffins Recipe

2/3 cup pureed peaches
3 Tbsp. poppy seeds
1 tsp. baking soda
1/4 tsp. salt
10 Tbsp. butter, softened
1/2 tsp. vanilla extract
1 cup sugar
1/3 cup lemon juice
2 eggs
1 Tbsp. yellow food coloring
1 1/4 cup flour
Grease 12 cup muffin tin. Stir baking soda into pureed peaches, set aside. They will foam. Cream butter and sugar together, add eggs one at a time. Alternately add flour and peaches. Then add salt, vanilla extract, poppy seed, lemon juice, and food coloring, mix until blended.

Fill muffin cups nearly to top. Bake for 20-25 minutes at 350 degrees.


Ginger Peach Pecan Bread

Ginger Peach Pecan Bread Recipe

2 1/3 cups all purpose flour
1 tsp. baking soda
1/3 cup sugar
1 tsp. ground ginger
1 cup molasses
1 tsp. ground cinnamon
3/4 cup hot water
3/4 tsp. salt
1/2 cup shortening
1 small can peaches, drained and cut into small pieces

Heat oven to 350 degrees. Grease and flour square pan, 9x9x2 inches. In large mixing bowl, beat all ingredients on low speed for 30 seconds, scraping bowl constantly. Then beat on medium speed for 3 minutes, scraping bowl occasionally. Pour into pan. Bake until wooden pick inserted in center comes out clean, about 50 minutes.
